Savoury Polenta Bites
Hello friends! So today is all about making some some polenta bites dressing with summery veggies for those living in the Northern Hemisphere, while those last. Did El Kebir is also around the corner. These will make a perfect addition for any Eid fest as appetizer or just as fingers food.
Ingredient for Polenta and Method
150 g polenta
1/2 teaspoon salt
Olive oil for baking traying
Preheat the ovem at 180°C. In a pot, combine the water, polenta and alt and bring it to boil. Let it simmer for few minutes, until the texture is puree-like. Oil a baking tray and pour in there the polenta. Let it cool down completely and refrigerate for at least 2 hours.
Ingredients for dressing and Method
One small onion, peeled, chopped
2 garlic gloves, peeled, chopped
A handful of cherries tomatoes, washed and cut in half
2 table spoon olive oil for cooking
Salt, pepper and chili to taste
Fresh seasonal herbs (such as basil, rosemary, parsley and/or mint)
While the polenta is resting, in a pot, pour some oil and stir fry the onion and garlic. When the onion turns brown, add the tomatoes and stir, until the tomatoes start to melt. Take it off the heat and add the fresh herbs of your choice.
Cut the polenta in any shape you like and put over it the dressing. They are equally good warm or very cold. Enjoy!
