The Yummiest Chesnut Hazelnut Chocolate Cookies

Hello! Those are some of my absolute favorites sweet treats when the cold season comes in. I first starting incorporating chesnut into my diet when I had from my then local bakery close to The Cité Universitaire de Paris the most delicious chesnut bread ever.

Those cookies are the perfect match for a heavenly afternoon Christmas tea, a warm glass of nut milk, a mulled apple cider or a comforting hot chocolate. They are also incredibly easy and quick to make not to mention that they are vegan and gluten free! 

Ingredients for a dozen cookies or so

100g of chestnut flour

20 g of sugar cane

½ tea spoon of baking soda

25g g of olive oil

100g of vegetable milk

25g of dark chocolate chips

100g of hazelnuts

Directions

Pre-heat the oven at 180°C.

In a bowl, mix all dry ingredients (flour, sugar and baking soda). Add oil and milk and keep mixing. Save about a dozen hazelnuts to decorate the cookies and roughly crush the remaining nuts. Add the nuts and chocolate to the cookie dough. 

Place a baking sheet on an oven tray and place a table spoon of dough for each cookie. Top it off with a hazelnut. Make sure to leave enough space between the cookies as they will rise while in the oven.

Put in the oven for 10-15 minutes depending of your oven.
