Vitamins Winter Salad

Hello! Salads are not just for Spring or Summer. You can also have a fresh, colorful salad packed with lots of goodness using seasonal Winter produces. This fruity salad playing with sweet and savory tastes, is a personal favorite full of vitamins. I absolutely love how fresh and nutritious it is. I promise, it will make you super energized despite the gloomy winter!


For the Salad

1 red apple grated

1 red apple chopped

1 pear grated

1 pear chopped

1 pomegranate

1 orange peeled and chopped

1 medium carrot grated

Few lettuce leaves

For the Dressing

The juice of one orange

1 teaspoon organic orange zest

2 table spoons olive oil

1 tablespoon Dijon mustard

1 tablespoon maple syrup

1 tablespoon apple cider vinegar

½ table spoon of chili flakes

A pinch of salt


30 g roasted almonds


For the Dressing

Combine all ingredients into a jar and shake to mix really well. Refrigerate until ready to serve. You can do that up to two days before.

For the Almonds  

Heat a pan to medium heat and roast the almonds for a minute or whenever they are nutty and golden. Be careful here as they burn rather quickly! For more even roasting, use your oven (That's what I usually do).

For the Salad

In a plate, put the lettuce leaves, and put aside. In a bowl, mix the grated apple, pear, and orange, pears; and transfer them to the plates. Add the chopped apple and pear. Top with pomegranate and almonds. Drizzle over the dressing and enjoy!
