Spicy Lentils and Rice Salad

I love how this warm salad is a meal on its own. And who said, salads are only for Spring and Summertime?! I am obsessed with anything spicy and/or made with lentils. I am currently travelling in Pakistan and can't just have enough of lentils and spices- I always want more! This recipe is definitely inspired by my previous travels in the region. So, I wanted to share with you a little bit of taste of it. I hope you will try this recipe and enjoy as much as I do.

Ingredients

1 serving cooked brown rice

½ tea spoon fresh ginger

1 cardamom

½ tea spoon nutmeg

1 cinnamon stick

½ curcuma powder

2 cloves

200g black lentils washed

200 ml water or vegetable stock

½ spoon of oil

Salt to taste

Fried onion and garlic

Few fresh coriander leaves

Directions

In a pot with a tight fitting lid, mix the lentils, the water (or vegetable stock), cardamom, nutmeg, cinnamon, the cloves and curcuma and bring to boil. Stir gently, cover and lower the heat.

Leave it to simmer for about 20-25 minutes. The lentils should be al dente.  Once the lentils are cooked, add the ginger, the oil and the salt. Gently mix the lentils with the rice. Decorate with the fried onions, garlic and the coriander leaves. Enjoy!
