Delicious Raw Courgette, Cumcumber and Mint Soup
Hello! So, we had a serious heat wave in Paris lately that inspired me to make a chilled raw soup for dinner. It is only five ingredients. It is so quick, easy, delicious and loaded with so many nutrients, especially all the vitamins packed fiber from cumcumber. It is also totally vegan, gluten-free and you will love it!
Ingredients (for 2 people)
1 Kg round courgettes
200 g cucumber
25 fresh mint leaves (I grow my own!)
1 spoon tahini
Salt and Pepper (optional)
Scoop the flesh out of the courgettes, being careful not to break the skin and the emptied courgettes aside. Mix the flesh and the remaining ingredients in a blender such as the vitamix. Pour the mixture in the emptied courgettes. Serve chilled and enjoy!
