Heartiest Lentil Soup

This soup is a staple in our home, and I make it at least once a week, all year long. It is quick, easy and incredibly hearty. Lentils are a wonderful source of protein and an excellent way to get iron as well.

 Ingredients (for 2 people)

1 yellow or 2 scallion onion

2 cloves garlic

200 g red lentils

1 liter water

A bunch of parsley

2 spoons of olive oil

Salt, pepper and cumin

Green Scalion to decorate (optional)

Chilli (optional)


Cut onion, if using scallion, save some of the green part to decorate. In a pot, add oil and onions. Stir till onion is tender. Add garlic, lentils, salt, pepper, cumin and chilli. Keep stirring for about two minutes. Add water and bring to boil. Reduce heat and simmer for about an hour. When ready to serve, shop parsley and add to soup. Use the green part of scallion to decorate.
