Dairy Free Pistachio & Sunflower Seeds 'Cheese'
Hello! So, I absolutely love cheese and as I am slowly transitionning from a vegetarian diet to a more vegan one, I have been wanting to make a dairy free cheese for the longest time. After much procastination, I finally got myself into making some the other day. I used pistachios- I thought, even if the cheese turns out disastrous, I love pistachios so much that I will probably eat it anyway! The results were well above expectations, so I decided to share it with you guiys. And oh, Souricette and Mauricette, the two little handknitted mouses pictured with the cheese loved it too!
As the festive season is just around the corner, it is the perfect appetizer or cheese replacement!
Ingredients for about 100g Cheese
30g unsalted pistachios roasted
30g sunflower seeds roasted
4 table spoon olive oil
4 table spoon lemon juice
Salt and Pepper to taste
Soak pistachios and sunflower seeds overnight, drain them and blend them with all remaining ingredients. Transfer the mix to a ramekin or small baking mold such as those used to bake mini tart. Let it rest at room temperature for at least one full day. The longer you let it rest, the more the flavors will come out, and the stronger your cheese will be.
The next day (or later, depending on how strong you would like your cheese to be), bake it for about a half an hour at 200°C.
Voilà! It is ready. We had both warm and cold it with some bread, raisins and apples. I actually prefered it even better after a couple days after I made it.
