Exquisite Tofu Ricotta Salad with Baby Spinach

Hello! This is a favorite recipe of mine that is awesome using tofu and spinach. It taste like ricotta cheese. Not only it is super tasty, but packed like all my recipes with lots of nutrients from spinach, tahin and of course tofu. Tofu, also known as bean curd is obtained by coagulating soy milk and then pressing the resulting curds into white blocks. It is protein-rich and also fairly low in calories.

Ingredients

500 g firm tofu, drained and crumbled using a fork or your fingers

2 spoon of tahin (sesame paste)

1  shallot finaly chopped

1 garlic clove finaly chopped

1 organic lemon juice and its zest

Salt & pepper to taste  

250 g Spinach steamed and drained.

Sesame to decorate (optional)

Directions

In a bowl, mix in this order the tofu, tahin, shallot, tahin, garlic, lemon zest and juice. Mix well and add salt and pepper.

Add the spinach and mix one last time.

Voil√†, it's ready!
