Almond Persimmon Whoopies!

Those almond persimmon whoopies are so yummy, they will be gone in a blink! Here is the recipe:

Ingredients

200g almond flour

20g sugar cane

1 pinch baking soda

100g almond butter

40 ml water

For the filling

1 persimmon

Vanilla, spices (optional)

Directions

Pre-heat the oven at 180°C. In a bowl, mix the almond flour, sugar and baking soda. Add the almond butter, water and using your hands, mix, until the mix is not sticky anymore. Make 30 small balls and flatten them up. Put them in a baking tray and then in the oven for 5 minutes. Let the biscuits cool down.

In the meantime, wash the persimmon, and put it in you blender (with the vanilla and/or if you are using any) in high speed until it becomes homogeneous.  Let the mixture seat for few minutes, its texture will become like a gel. Spread the persimmon in one side of a biscuit and top it off with a second biscuit to make a sandwich. Do the same for the rest of the biscuits.
