Tasty Almond Spread

Happy New Year! I love how this versatile spread that I make using the leftover almond pulp from making milk. It is really easy and quick. I also love how versatile it is, it is not only a spread but also a great healthy addition to a homemade salad sauce. My personal favorite part is the fragrant addition of my homegrown rosemary.

Ingredients

200g almond pulp

100g of sun-dried tomatoes

5 tablespoons of fresh lemon juice

4 cloves of garlic

1 teaspoon of dijon mustard

1 teaspoon chili flakes

Salt and pepper to taste.  

Fesh rosemary

Method

Blend everything in your blender until smooth and fluffy. Do not hesitate depending on your blender or food processor, to adjust oil and lemon juice as needed. Keep it in a sealed jar in your fridge. I actually prefer it few weeks after I make it, as it tastes better as it ages. Serve with with bread, rice and/or buckwheat crakers.
